I'm looking at building a new system based on a nVidia Sli chipset... With either of these at its center. I know both are great overlockers and are comparable in price. Which will deliver the best performance when overclocked?

Personally I would go with the E2180 and overclock it. The thing I like about intels is that each 1 core can access all the cache if need be.

It all depends on what you want on your motherboard really. I would recommend no less than this one.
