TrueCrypt fora or tutorials might have some help in that area. There's a lot of history and experience at the TrueCrypt site which might help even if you don't use TrueCrypt.

Perhaps something like this thread? (which uses an Acronis non-freeware solution)
In particular, the post from "noyb2008"

I can't recall if Acronis has a full-function free trial period or a limited function freeware version, but it costs something like $30 for home use.

Wow, 500GB of encrypted porn... very secure indeed. What you're afraid people will peek at your porn, McFly? ;)

You run Linux right? I think you can do a software RAID instead of using hardware. I think you can do virtual drives, too, so you don't need to have same size drives. As a matter of fact you can use the same drive too, just RAID two same size partitions.

So go get a 1TB Scorpio, run virtual RAID 1 on two parts each of 500GB. Now you can encrypt And mirror your porn. ;)
